  • 1 c butter softened
  • 2 c firmly packed brown sugar
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 c all purpose flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 cold fashioned oats
  • 1 (12-oz) bag white chocolate chips
  • 1 1/2 c dried red cherries
  • 1 1/2 c roughly chopped nuts (walnuts or pecans work well)
  1. Preheat oven to 400°F. Blend butter, sugar, eggs, and vanilla until fluffy. Sift together flour, salt, and baking soda. Add flour mixture and oats to butter mixture, 1 cup at a time. Beat after each addition. When well blended, fold in white chocolate chips, dried cherries, and nuts. Drop onto a cookie sheet using a soup spoon or cookie dough scoop. Bake 10-12 minutes or until edges are barely golden brown. Watch carefully as it’s easy to over-bake oatmeal cookies.
