2 teaspoons canola oil, divided
1 (6-inch) corn tortilla, cut in half then cut into 1/4-inch strips
2 tablespoons finely chopped onion
2 tablespoons finely diced red bell pepper
2 tablespoons finely diced green bell pepper
1 1/4 cups liquid egg substitute
2 tablespoons water
2 tablespoons chopped fresh cilantro
1/4 teaspoon chili powder
1/4 teaspoon ground cumin

In a medium skillet over medium heat, heat 1 teaspoon oil until hot. Add tortilla strips and cook 3 to 5 minutes or until crispy, stirring occasionally. Remove to a bowl and set aside.
In the same skillet, add remaining 1 teaspoon oil. Add onion and red and green bell peppers, and cook 3 to 4 minutes or until softened.
Meanwhile, in a small bowl, combine egg substitute, water, cilantro, chili powder, and cumin; mix well. Add the egg mixture in skillet and cook until eggs are set, stirring occasionally. Top with tortilla strips and serve immediately.
