Slow Cooked Artichoke Chicken

from the kitchen of: Jan Messali High in fiber and antioxidants, artichokes are a welcome addition to this divine chicken dish. Serve this easy recipe over cooked rice for a hearty meal fit for the hungriest crowd.
  • 3 boneless skinless chicken breast halves
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 2 tbs olive oil
  • 3 tbs white balsamic vinegar
  • 2 clove garlic minced
  • 2 leeks washed well and thinly sliced (discard tough, dark green leaves)
  • 8 oz frozen artichoke hearts
  • 1 1/2 c white wine (or chicken broth)
  1. Season chicken pieces with salt, paprika, and cayenne. In a large skillet over medium-high heat, brown chicken on all sides in olive oil. Remove chicken from skillet and place in slow cooker. Add balsamic vinegar, garlic, and leeks to skillet and stir together for 1 minute; stir in artichoke hearts and white wine. Pour skillet ingredients over chicken in slow cooker. Cover and cook on low for 5 to 6 hours.
