Peach and Berry Breakfast Cobbler

- 1 1/2 c frozen or fresh peaches slices
- 1 c frozen or fresh raspberries
- 1 tbs brown sugar
- 1/2 tsp cinnamon
- 2 tbs ground flaxseeds
- 1/2 c unsweetened flaked coconut
- Stir the frozen fruit and brown sugar together in a microwave-safe bowl; heat in the micro-wave on high until the mixture is hot, about 2 minutes, stirring once about 1 minute into the heating process. Stir the cinnamon, ground flaxseeds, and coconut into the heated berries. This is delicious topped with sweetened whipped cream.
