Orange Flaxseed Muffins

  • 1 1/2 c oat bran
  • 1 c whole wheat flour
  • 1 c ground flaxseed meal
  • 1 c wheat bran
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 c canola oil
  • 2 eggs
  • 2 oranges peeled and quartered
  • 1 c nonfat plain yogurt
  • 1 c brown sugar
  • orange zest for garnish
  1. Preheat oven to 375°F. Line muffin tins with paper baking cups. In a large bowl, combine oat bran, wheat flour, flaxseed meal, wheat bran, baking powder, baking soda, and salt. In a blender, blend oil, eggs, oranges, yogurt, and brown sugar until mixed well. Fold wet ingredients into dry ingredients. Bake 15 to 20 minutes or until a toothpick inserted comes out clean. Garnish with orange zest.
