Oat Crusted Chicken Nuggets

By Wanda Michaels Chicken nuggets are often called out for being unhealthy, but these are good and good for you!
- 1 lb boneless, skinless chicken breast
- 2 c old fashioned rolled oats
- 2 large eggs
- 1 tbs canola oil
- 1/3 tsp salt
- 1/4 tsp black pepper
- Preheat oven to 425°F. Mix oil, salt, and pepper in a bowl. Coarsely grind oats in a blender or food processor. Whisk oats and oil mixture together; then pour into a shallow dish. In a separate bowl, whisk egg whites for 1 minute. Lightly oil a baking sheet. Cut chicken breasts into strips. Roll chicken in egg white and then coat well with oats. Place chicken strips on the prepared baking sheet, then coat them with cooking spray. Bake 15 minutes, until chicken is tender and golden brown. (Be careful not to over-bake or chicken will be dry.) Let cool on baking sheet for 3 to 5 minutes.
