Mint Infused Fruit Salad
from the kitchen of Diane Richardson, A dressing of mint-infused sugar brings out the flavors of each fruit in this slightly sweetened fruit salad. This truly unique salad could easily become a family favorite!

Ingredients
  • 2 c halved grapes
  • 1 c hulled and sliced strawberries
  • 1 c diced fresh pineapple
  • 2 c diced honeydew melons
  • 1 c diced cantaloupe
  • 1 c diced fresh grapefruit
  • 1 c blueberries
  • 2 c diced oranges
  • 2 tbs sugar
  • ¼ c minced fresh mint leaves
Instructions
  1. Combine all ingredients, except mint and sugar, in a large bowl. In mortar and pestle, grind minced mint and sugar together until well blended. Add minted sugar to fruit and lightly mix. Cover and chill salad at least 3 hours or overnight. Garnish with extra mint leaves if desired.
