Meatball Mushroom Stroganoff
This super creamy, mouthwatering stroganoff with fresh mushrooms and hearty meatballs is made easily from scratch. No cream of mushroom soup here!

  • 3 tbs extra virgin olive oil
  • ½ c chopped onion
  • 1 c garlic minced
  • 1 c mushrooms sliced
  • 1 c beef or chicken stock
  • 2 tbs cornstarch
  • 2 c half and half or whole milk 24
  • 2 tbs chopped fresh dill or parsley
  • ½ c sour cream
  • salt and freshly ground pepper
  • 4 c rice cooked
  1. Heat the oil in a pan and add chopped onion and garlic. Cook over medium heat until softened, about 5 minutes. Add the mushrooms and cook 5 more minutes. Add the chicken stock and bring to a boil, stirring frequently. Mix cornstarch with half-and-half. Add to pan and stir until thickened. Add the meatballs, dill, sour cream, salt, and pepper. Reduce heat to low and cook until the meatballs are heated through. Serve hot over rice.
