Ham and Rice Skillet

2 cups frozen seasoning blend (celery, onion, peppers, parsley)
5 slices 98% fat-free deli ham, diced
2 cups cooked brown rice
1/2 cup liquid egg substitute
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 small scallion, sliced
In a nonstick skillet over medium heat, combine 2 tablespoons water and frozen seasoning blend. Cook for 3 to 4 minutes or until vegetables are tender and liquid evaporates, stirring occasionally.
Spray vegetables and skillet with cooking spray. Add ham and cook 1 to 2 minutes. Stir in rice and mix well. Pour in egg substitute and continue to cook until it sets, stirring occasionally.
Sprinkle with scallions and serve.
