Meatballs are such a versatile addition to a main dish and are the perfect secret weapon to keep in the freezer. Just by changing their size, adjusting the ingredients a bit, or varying the sauce they sit in, you end up with all sorts of wonderful entrees!
  • 1 lb ground beef
  • 1 lb ground sausage
  • 2 eggs
  • 1/2 c milk
  • 2 c bread crumbs
  • 1/2 c chopped onion
  • 1/2 c grated Parmesan cheese
  • 2 tbs tomato paste
  • 1 tbs chopped fresh parsley
  • 1 tsp crushed oregano
  • 3/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tsp salt
  1. In a large bowl, mix ground meats using an electric mixer. In a separate medium bowl, mix together eggs, milk, bread crumbs, onion, cheese, tomato paste, parsley, and all seasonings. Add egg mixture to meat mixture and combine thoroughly. Spray two large baking sheets with cooking spray. Form meatballs either by hand or using a meatball scoop, and place balls a small distance apart on the pans. Cover with plastic wrap, and freeze (approximately 3 hours). When balls are frozen, remove from pans and place in labeled zippered plastic freezer bags or plastic freezer containers. TO COOK MEATBALLS, thaw the amount needed in the refrigerator. When ready to cook, add the meatballs into your sauce (spaghetti, stroganoff, etc.) and simmer for about 30 minutes, bake on lightly oiled sheet at 350°F for 25 minutes, or fry them on medium-low heat until crispy and cooked through.
