from the kitchen of: Lenore Beckstrom This is a fun twist to a typical dinner in a pumpkin. Acorn squash is a good choice because, depending on the size of the squash used, everyone can have their own. Or if need be, they can be cut in half since this is a hearty meal.
  • 3 large acorn squash
  • 1 lb ground beef
  • 1/2 c celery chopped
  • 1 small green pepper chopped
  • 1 small onion chopped
  • 1/2 c soy sauce
  • 2 tbs brown sugar
  • 1 (4-oz) can sliced mushrooms
  • 1 (10 3/4-oz) can condensed cream of chicken soup
  • 2 c cooked rice
  1. Preheat oven to 375°F. Wash squash well; cut off top and remove seeds. In a large skillet, cook the beef, celery, green pepper, and onion until meat is browned and vegetables are tender; drain. Add all remaining ingredients and cook an additional 3 minutes, mixing well. Spoon filling into prepared squash and place them on a cookie sheet. Bake for 1 hour.
