It consists of tortilla chips, shredded chicken, green chilies, salsa, and a few other Mexican-inspired ingredients. You would assume something this tasty would require more work!
1 pound of cooked chicken, shredded
1 can cream of chicken soup
1/2 cup sour cream
1/2 cup salsa
1 can chopped green chilies
2 cups Pepper Jack (or Monterey for less spicy) cheese, shredded and divided
2 cups tortilla chips, slightly crushed
1. Preheat oven to 425 degrees F.
2. In a mixing bowl, combine first 5 ingredients plus 1 cup of cheese. Pour chicken mixture into a lightly greased 8 x 8 inch casserole dish. Top with remaining one cup of cheese and crushed tortilla chips. Bake uncovered about 20 minutes or until chips start to brown and casserole bubble.
