Coconut Sugar Cookies Recipe

from the kitchen of Alice & Jeanne Coconut flavored emulsion is the secret to this yummy no-roll sugar cookie – it provides a full, deep-bodied flavor that doesn’t weaken with baking.

Ingredients:
1 c sugar
1 c butter at room temperature
1 egg
1 tsp coconut flavored emulsion
3/4 c shredded sweetened coconut
2 c flour
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp salt
sugar for rolling cookie dough balls
1/4 c buttermilk
1/2 c shredded sweetened coconut

Directions:

Cream butter and sugar. Blend in egg, coconut flavoring, and coconut. Sift together flour, soda, cream of tartar, and salt and mix into batter. Roll cookie dough into walnut-sized balls and roll in sugar. Place on cookie sheet. Flatten with bottom of a glass. Mix buttermilk and ½ cup shredded coconut together. Top each cookie round with ½ teaspoon buttermilk and coconut mixture; top this with another flattened cookie round. Pinch edges together. Bake for 8 to 10 minutes or until cookies edges is just golden.
