Citrus Grilled Salmon

Thanks to the marinade, there’s very little chance these fillets will end up dry and uninteresting. And this stunning combination of flavors will convert even the toughest fish skeptics.

Ingredients
  • extra virgin olive oil
  • 4 (6 ounces, 1 inch thick) salmon filets
  • kosher salt
  • freshly cracked black pepper
  • MARINADE
  • ¾ c fresh orange juice
  • ¼ c fresh lemon juice
  • ¼ c fresh lime juice
  • 1 clove garlic minced
  • 2 tbs orange marmalade
  • 2 tbs soy sauce
  • 1 tbs light brown sugar
  • 2 tbs minced cilantro
  • 1 tbs butter
  • pinch kosher salt
  • freshly cracked black pepper
Instructions
  1. For salmon marinade: In a medium saucepan, bring all marinade ingredients to a boil over medium heat, stirring
  2. constantly to melt the preserves and to keep the mixture from burning. Reduce heat to a simmer and let the
  3. marinade reduce until syrupy, about 15 to 20 minutes. Add additional salt and pepper to taste. Pour marinade into a
  4. large shallow container; set salmon fillets in marinade and cover. Refrigerate for 1 to 2 hours.
  5. When ready to cook, heat grill to medium-high heat. Brush both sides of salmon fillets with olive oil just before
  6. grilling, then season with salt and pepper to taste. Grill salmon for approximately 4 minutes per side, brushing with
  7. marinade during the final few minutes of cooking. Transfer salmon to serving plates and garnish with extra cilantro
  8. leaves if desired.
