Chicken & Avocado Enchiladas Recipes

Ingredients
  • 2 tbs olive oil
  • 1 small-medium yellow onion, finely chopped
  • 2 poblano peppers, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 8 flour tortillas (medium size)
  • 4 c shredded, cooked chicken (i used a rotisserie chicken)
  • 2 c grated Monterrey jack cheese (please grate your own)
  • avocado cream sauce ingredients:
  • 2 tbs unsalted butter
  • 2 tbs all-purpose flour
  • 2 c chicken broth
  • ¾ c sour cream
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp ground black pepper
  • 2 ripe avocados, peeled, chopped and pitted
  • ½ c fresh cilantro
  • juice of one lime

  1. Preheat oven to 375 degrees F. Prepare shredded chicken and shredded cheese and set aside. Make
