Avocado Wrapped in Prosciutto Recipe
Adapted from BHG Holiday Appetizers magazine. The dressing can be made ahead and kept in the fridge, but don't prepare the avocados until just before serving or they will turn brown. Total Time: 15mins Most Helpful To combine prosciutto with avocado never occurred to me but when I saw this recipe it appealed to me right away. And we were not disappointed! I also did not add salt and made the dressing as written, worth a repeat...thank you! Pets'R'us December 15, 2003, Loved this recipe it is so easy yet great for a dinner party. The sauce is lovely as it is no alteration needed. I did not add any salt as the prosciutto I had was salty enough. I used it as 4 servings as a starter. Latchy September 14, 2003, It was good and easy. The creaminess of the avocado really shines. I subbed fresh basil for oregano. Ingredients
  • 2 tbs olive oil
  • 4 Tsp lemon juice
  • 2 fresh garlic cloves, minced, to taste
  • 1 tbs fresh oregano, minced, to taste
  • ⅛ Tsp fresh coarse ground black pepper, to taste
  • 2 avocados
  • 3 oz very thinly sliced prosciutto, cut into 16 strips
Instructions
  1. Combine oil, lemon juice, garlic, oregano, and pepper in a container with a tight lid (such as a jar) and set aside.
  2. Cut avocados into halves, remove pit, and peel each half carefully.
  3. Slice each avocado half into 4 wedges and wrap a prosciutto strip around each in the center.
  4. Shake the dressing if the ingredients have settled and tested for flavor-adjust seasonings if needed (although prosciutto is often very salty- be careful not to add salt unless you really like things very salty).
  5. Set on a serving platter and drizzle with some of the dressing (as much or as little as desired).
  6. Serve immediately as avocados brown quickly once cut.
