Asparagus and Tomato Salad

Here's a salad that's full of fresh taste and bright color! Our recipe for Asparagus and Tomato Salad is full of nutrition, too! Serve this flavor-filled, low-carb salad any time of the year and your whole family will cheer!

2 (10-ounce) packages frozen asparagus spears, thawed and cut in half (see Note)
4 large plum tomatoes, cut into 1-inch chunks (1 pound)
1/2 medium red onion, cut into strips
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/4 cup chopped fresh basil
3/4 teaspoon salt

In a large bowl, combine the asparagus, tomatoes, and onion; toss gently.

In a small bowl, whisk together the remaining ingredients. Pour over the asparagus mixture and toss until coated.

Cover and chill for at least 1 hour before serving.

If you'd prefer to use fresh asparagus, simply blanch them in a large pot of boiling water for 2 minutes then cool and cut.
