Apple and Avocado Salad with Fresh Citrus Dressing Recipe

  • 1 (10-oz) pkg salad greens
  • ¼ c chopped red onion
  • ½ c chopped walnuts
  • ½ c crumbled blue cheese
  • 1 tsp fresh lemon zest
  • 1 apple peeled, cored, and thinly sliced
  • 1 avocado peeled, pitted, and diced
  • 1 orange juiced
  • ½ lemon juiced
  • 1 tsp fresh lemon zest
  • 1 clove garlic minced
  • 2 tbs extra virgin olive oil
  • 2 tbs honey
  • salt and pepper to taste
  1. In a large bowl, toss together the baby greens, red onion, walnuts, blue cheese, and lemon zest. Just before serving, mix in the apple and avocado and drizzle with fresh citrus dressing.
  3. In a leak-proof container, combine the orange juice, lemon juice, lemon zest, garlic, olive oil, honey, and salt and pepper. Seal container and shake until ingredients are combined well.
