Dinner in a Squash

from the kitchen of Lenore Beckstrom, This is a fun twist to a typical dinner in a pumpkin. Acorn squash is a good choice because, depending on the size of the squash used, everyone can have their own. Or if need be, they can be cut in half since this is a hearty meal.

Ingredients:
3 large acorn squash
1 lb ground beef
1/2 c celery chopped
1 small green pepper chopped
1 small onion chopped
1/2 c soy sauce
2 tbs brown sugar
1 (4-oz) can sliced mushrooms
1 (10 3/4-oz) can condense cream of chicken soup
2 c cooked rice

Directions:

Preheat oven to 375°F. Wash squash well; cut off the top and remove seeds. In a large skillet, cook the beef, celery, green pepper, and onion until meat is browned and vegetables are tender; drain. Add all remaining ingredients and cook an additional 3 minutes, mixing well. Spoon filling into prepared squash and place them on a cookie sheet. Bake for 1 hour.
