Healthy Cookies

from the kitchen of Brandon Evers, This is a no-mess, healthy finger food. No one will believe these delicious cookies are made with lentils. Prep time: Cook time: Yield: 10 to 12 cookies Serving size: Calories per serving: 5,433.116

Ingredients:
3/4 c butter softened
3/4 c brown sugar
1 egg
1 c mixed lentils cooked, drained well, and pureed
1 tbs vanilla extract
2 cold fashioned rolled oats
1 1/2 c whole wheat flour
1 tsp baking soda
1/2 tsp salt
1/2 c milk chocolate chips
1 c slivered almonds
1/4 c shelled pumpkin seed chopped
1/2 c golden raisins

Directions:

Preheat oven to 375°F. Oil a cookie sheet. Cream the butter and sugar together. Add the egg and mix well. Stir in the lentil purée and vanilla. Add the rest of the ingredients and mix well. Drop by spoonfuls onto the baking sheet and flatten with a fork. Bake 15 minutes or until cookies are golden. Cool on a rack.

TIP: To cook lentils, measure amount needed and rinse. Place in appropriate size saucepan. Add at least twice the amount of water as lentils. Cover and bring to a boil. Reduce heat and simmer 45 to 60 minutes for purée.
